TURKEY, BRIE AND CRANBERRY ROLLS

PERFECT FOR CHRISTMAS

My mum makes the absolute best sausage rolls. They are honestly better than any I’ve ever had from a bakery, the freezer section of a grocery store, 7/11, etc. The best. So, when I felt like creating my own sausage rolls, I knew they wouldn’t be able to compete. So, instead, I decided to try something a little different: Turkey, brie and cranberry rolls. I’m definitely in the Christmas mode, and these are absolutely perfect for that. It’s like festivity in every mouthful.

One of my favourite things about this recipe is how easy it is to make. Since I’ve never made sausage rolls or anything like them before, I definitely thought there would be a little more to it. Also, because turkey mince cooks very quickly, these can be on your plate in 30 minutes – which is perfect for impatient (or hangry) people like me!

INGREDIENTS

  • 500g turkey mince
  • 2 large cloves of garlic, minced
  • 2 spring onions, diced
  • 1 chicken stock cube
  • 100g brie
  • 2 sheets ready rolled puff pastry*
  • 8 tbsp cranberry sauce
  • 1 egg, beaten
  • chopped parsley for garnish (optional)

*Our puff pastry always comes ready rolled in Australia, or at least as far as I’ve seen. If it’s not ready rolled, you may only need 1 sheet – I would suggest to just eyeball it as you go.

You also may not need to use as much cranberry sauce, depending on your taste. I used quite a lot because I like it to be relatively thick.

DIRECTIONS

  1. Preheat oven to 180 degrees celsius, and grease two baking trays.
  2. Add turkey mince, garlic and spring onion to a large bowl. Crumble chicken stock into the bowl, and mix until fully combined.
  3. Tear or cut small pieces of brie, and add to the mixture, again mixing until combined.
  4. Cut your pastry sheets in half width-wise. Spoon two tablespoons (or however much you choose to use) of cranberry sauce on each sheet. Spread evenly.
  1. Divide the turkey mixture in 4, and spread evenly in the middle of each piece of pastry. Leave a 1 cm gap on each side.
  2. Fold the pastry so that the edges meet in the middle, and use a fork to press down and seal it.
  3. Cut each large roll into 4 pieces, so there will be 16 total. Place onto greased baking trays. Brush with beaten egg, and bake for 25 minutes until golden brown.
