Taco Cupcakes


I am aware the thought of tacos and cupcakes together is somewhat sickening: but fear not – the taco is made out of lollies and therefore a delightful addition to a vanilla frosted cupcake already great on it’s own.

A few of my girlfriends and I like to get together about once a month and have themed dinners, taking turns to host at our houses. This weekend, my friend Shannon and I hosted our Mexican Dinner theme, and I decided to make cupcakes for dessert. Being a Mexican food theme, I thought it was only fitting to attempt to make little tacos to adorn the cupcakes.


Honestly, the tacos don’t look that great – but the cupcake recipe in itself is so delicious, I decided to write it out anyway. Feel free to improvise on the tacos – if you find a combination that looks better, please let me know for next time!

Instructions
Vanilla Cupcake
  1. Preheat your oven at 160 degrees celsius (320 degrees fahrenheit)
  2. Add your flour, sugar, butter (remember to soften first), baking powder and sea salt to a large mixing bowl. Use an electric mixer on a slow speed to beat the ingredients together until combined. There should be no large chunks of butter visible. Pour in ¼ cup of milk (half of what the ingredients list calls for), and beat the mixture on a slow speed again until the milk is blended in and the mixture is smooth.
  3. Line your muffin pan cups with paper cupcake liners, and divide the mixture among them – only fill ½ full as this mixture will rise quite a bit.
  4. Bake at 160 degrees celsius for 20-25 minutes – the cupcakes should be golden, and have risen to the top of the paper cupcake liners. Use something to gently touch the top of a cupcake – the mixture should spring back if ready. Take the pan out and allow cupcakes to cool for a few minutes before transferring to a wire rack. Allow to cool completely before decorating the cupcakes.
Vanilla Frosting
  1. Use your electric mixer on medium speed to beat the butter until fluffy.
  2. Adding 1 cup of icing sugar at a time, beat on slow speed for about 15 seconds – 1 cup at a time. Once all 3 cups are added, turn on medium speed and beat until smooth.
  3. Add the imitation vanilla, the milk and the sea salt, and continue beating on a slow speed until all ingredients are combined and the mixture is fluffy. Remember to stop on occasion to scrape the sides down from the bowl back into the mixture.
Lollies for decoration
  1. When the cupcakes have cooled down, frost them.
  2. Cut your banana marshmallow lollies in half – do it very slowly and start from the bottom, otherwise they may break. But don’t be discouraged if they break – because of their texture, you can push the pieces back together and they will stick. Place the banana halves on the frosting, with a small gap in between them for the “taco fillings”.
  3. Using a small knife, scrape the sides of the chocolate bullets into a pile – this will be the “meat”. Sprinkle the chocolate shavings in between the banana pieces.
  4. You may use a knife for this part, but I found it easier to use ordinary kitchen scissors. Cut the red, green and yellow snakes to resemble lettuce, tomato and cheese, and place a few pieces of each over the “meat”.

And there they are! I would highly recommend to make the cupcakes & frosting at the very least, because it really is an amazing combination of ingredients – there’s a very faint taste of sea salt while you’re eating them, which goes perfectly with the sweetness of the frosting.
