Peri Peri Chicken Salsa Pockets

I made this recipe a couple nights ago, and because I’m terribly slack and lazy, I’ve only just gotten around to writing up the post for it. However, if you try it, I think you’ll forgive me because it is delicious. Not only that, but as they’re baked and not fried, they’re a lot better for you!

Now, I’m not including this as part of the directions, but for the shredded chicken – I bought a whole roast chicken from my local supermarket and used two forks, one to hold the chicken, and the other to shred the meat from it – but you can obviously cook the chicken yourself, or however you prefer. I was just being somewhat lazy (which seems to be a common theme for me.)

Crispy pockets filled with peri peri chicken & salsa, topped with your favourites.

Instructions
  1. Preheat your oven to 180 degrees celsius. Line two trays with baking paper.
  2. Put your shredded chicken in a large bowl, and add the peri peri sauce. Mix well until chicken is evenly coated with the sauce.
  3. Add your salsa, cheddar cheese, oregano and cumin to the same bowl, and combine the ingredients.
  4. Lay out your tortillas, and place ⅓ of a cup of the chicken mixture into the centre of each tortilla.
  5. Fold the tortillas opposite sides over the filling, then place the pockets seam-down onto a baking sheet.
  6. Brush the top of the pockets with melted butter.
  7. Bake the pockets for 25 minutes or until golden and crispy.
  8. Let cool for a few minutes before adding your desired toppings and serving.


There you have it. Crispy pockets with peri peri chicken and salsa – and your favourite toppings. How could something so easy be so good?

My apologies for the not-very-good picture after it was cut in half – it was so tasty, I wanted to eat it right away so I spent less time trying to get a shot than I normally would. Can you blame me?
