Hi everyone.

As Winter started here just 4 days ago, this was probably one of the most miserable weekends we’ve had so far this year. I don’t know about you, but when it’s cold and rainy outside, I like to stay indoors where it’s warm and toasty.

So what do I do while I’m refusing to venture outside? Sometimes I read, sometimes I play games or watch TV shows… and sometimes I bake. Today was one of those times.

I haven’t done a lot of baking recently – and it’s been a very long time since I’ve made a batch of cookies. Gathering up some ingredients I already had at home, I decided to throw them together and hope they turned out right. (Spoiler: they did.)

Instructions
  1. Combine the flour, baking powder, baking soda, and sea salt in a large bowl. Set aside.
  2. Use an electric mixer to combine the softened butter and peanut butter in a different bowl, mixing well.
  3. Add the white sugar and the brown sugar to the butter mixture and continue blending together.
  4. Beat the egg and the egg yolk, vanilla extract, honey, and greek yoghurt into the butter mixture.
  5. Add the flour mixture to the butter mixture and continue to beat on the lowest speed until combined.
  6. Add in the chocolate chunks, and stir using a spoon.
  7. Cover your dough, and let chill in the refrigerator for at least 30 minutes. Meanwhile, preheat your oven to 180 degrees celsius.
  8. Once the dough is ready, roll the dough into balls and place on an un-greased baking tray. Bake for approximately 12 minutes, but keep an eye on them. Take out of the oven when just reaching a nice, golden brown.
  9. Let cool for 3-5 minutes. Inhale.
