This Mediterranean Pasta Salad was one of the easiest recipes I’ve made, and it tastes so good – you’ve got to eat it to believe it, as the pictures don’t quite do it justice!

Basically, you boil your choice of pasta – I used tortellini because it’s my favourite after fettuccine, but I thought for a pasta salad it would work better. Then you stir it in with tomatoes, cucumber, green capsicum (also known as green bell pepper I believe – us Australians have weird words), red onion and feta cheese. Then you make the dressing, pour it over, add some salt and pepper, and toss it all together. So easy.

Instructions
  1. Boil a pot of salted water, then add your pasta of choice (tortellini was used for this recipe). Cook the pasta according to the instructions on the package, making sure to stir it occasionally.
  2. While the pasta is cooking, prepare your vegetables. Cut your baby roma tomatoes in halves, slice your red onion, and dice your cucumber and capsicum. Crumble your feta cheese if not already crumbled.
  3. Place the sliced red onion in a bowl of cold water to remove some of the tanginess. Drain after 5 minutes.
  4. When the pasta has finished cooking, drain it and place it in a large bowl. Add your vegetables and feta cheese, and toss using your hands.
  5. In a separate small bowl, add your vinegar, lemon juice, sugar, oregano and chilli flakes, and whisk to combine.
  6. Pour the dressing over the pasta and vegetables. Season with salt and pepper, and toss all the ingredients together again.
  7. Serve warm, or at room temperature. Enjoy!

 I hope you guys enjoyed this recipe. I think it’s a perfect pasta salad for a hot Summers’ day, or a picnic – where you’re in the mood for something cool and refreshing, rather than the creamy pasta salads that are usually served.

    I watched the video and omggg it looks super quick and easy to make!! How long did it take you to make this?

      Basically it was just the time it took to cook the pasta (which can vary depending on type/amount, but approx 10 minutes) plus a few minutes for tossing it all together, since you can cut the vegetables and make the dressing while the pasta cooks!
