This Mediterranean Pasta Salad was one of the easiest recipes I’ve made, and it tastes so good – you’ve got to eat it to believe it, as the pictures don’t quite do it justice!
I did my first attempt of a recipe video for this pasta salad, which you can view below – feel free to leave me a comment on YouTube if you enjoyed it!
Basically, you boil your choice of pasta – I used tortellini because it’s my favourite after fettuccine, but I thought for a pasta salad it would work better. Then you stir it in with tomatoes, cucumber, green capsicum (also known as green bell pepper I believe – us Australians have weird words), red onion and feta cheese. Then you make the dressing, pour it over, add some salt and pepper, and toss it all together. So easy.
But don’t take my word for it – check out the actual recipe below!
I hope you guys enjoyed this recipe. I think it’s a perfect pasta salad for a hot Summers’ day, or a picnic – where you’re in the mood for something cool and refreshing, rather than the creamy pasta salads that are usually served.
As always, let me know if you tried this recipe and what you thought of it!
