The combination of soft potatoes, crispy bacon and melted cheddar cheese in this Happy Breakfast Hash is enough to put a smile on anyone’s face in the morning.
I’m usually pretty content with some smooth peanut butter on toast, or maybe a bowl of cereal (the disgustingly sugary ones are the best). John’s a little more exciting than me, and will often cook us noodles with chilli and soy sauce (you might have seen these on my Life Update post) or some sort of omelette with capsicum and onion.
Today we decided to try something new, which is how the Happy Breakfast Hash came about. Originally, we (meaning John) thought of the name after we added the two eggs and decided to make a smiley face out of cheese. However, the cheese looked too damn good to keep confined to one small part, so we ended up adding it all over. We definitely made the right decision, and the name still stuck anyway so nothing was lost.
