I’m usually pretty content with some smooth peanut butter on toast, or maybe a bowl of cereal (the disgustingly sugary ones are the best). John’s a little more exciting than me, and will often cook us noodles with chilli and soy sauce (you might have seen these on my Life Update post) or some sort of omelette with capsicum and onion.

Today we decided to try something new, which is how the Happy Breakfast Hash came about. Originally, we (meaning John) thought of the name after we added the two eggs and decided to make a smiley face out of cheese. However, the cheese looked too damn good to keep confined to one small part, so we ended up adding it all over. We definitely made the right decision, and the name still stuck anyway so nothing was lost.

Instructions
  1. Dice potatoes into small cubes once washed and peeled.
  2. Add approximately two tablespoons of olive oil to a frying pan over medium-heat. Add the diced potatoes, and cook until crispy and a light golden colour, stirring occasionally.
  3. Add the diced bacon to the frying pan, and continue to stir on occasion for about 10 minutes. The bacon will be crispy, and the potatoes will be nice and soft on the inside. Add the spring onions and continue to stir the ingredients together in the pan. Season with sea salt and pepper according to taste.
  4. Using your spatula or whatever you were using to stir the ingredients, make two small dents in the mixture (so that you see the frying pan). Crack your eggs in these two dents, and sprinkle the cheddar cheese all over the rest of the mixture. Once the eggs are cooked to your liking, remove the mixture from the frypan straight onto your plates and serve!

    These look incredible!! It looks like heaven on earth omg :D I really wanna make this now as I am starving because I haven’t ate breakfast yet but I don’t know if I have any potatoes ugh :(

        I actually made this recipe 2 days ago as I had 2 potatoes in the fridge hehe. At first it was going well then everything started going downhill. I didn’t crack the egg properly which resulted into a big mess, and the potatoes also started burning so I panicked so hard hahahaha!! But its not overly burnt and its still edible but it tastes alright :) Silly me! I’m probably gonna try making it again next week and if i do i’ll send you a picture on twitter :)
