Garlic Butter Prawns

My new favourite seafood recipe: garlic butter prawns.

Unless you’re new to my blog, I assume you’ve either read my Seafood Date in Daylesford post, or watched my Birthday Weekend in Daylesford vlog – if so, you would have seen the delicious seafood dinner John and I made on the day we arrived: lobster, and garlic butter prawns.

This recipe was too amazing to keep to ourselves, so I’m going to share it with you – right here, right now!

Honestly, I wasn’t sure if I could top my Crispy Fried Prawns with another prawn recipe, but I gotta admit… these garlic butter prawns were even better. (And you know how proud I was of those fried prawns.)

Unfortunately, by the time we finished cooking in Daylesford, it was too dark outside to have any nice, natural lighting, so the photos didn’t turn out very good. So John and I decided to make them again – I actually filmed the process on a vlog for my YouTube channel which will be up later, so keep an eye out for that!

Once again, we were blown away by how amazing this turned out. If it wasn’t so unhealthy, I think this would become a regular meal for us – I might try and make a healthier version with reduced butter, as that’s really the only bad ingredient – and only because there’s so much of it. I’m not sure if it would have the same delicious outcome, but I’m definitely tempted to try!

Instructions
  1. Melt 2 tablespoons of unsalted butter in a large frypan over medium-high heat.
  2. Add the prawns, salt and pepper (to taste). Stir occasionally while cooking.
  3. Once the prawns have been cooking for approximately 2-3 minutes (they should be pink), add garlic, chicken stock and lemon juice to frypan and stir well.
  4. Bring to a boil, reduce heat and let simmer for a few minutes. Stir in the remaining butter, one teaspoon at a time.
  5. Once the butter is melted, serve immediately. Garnish with fresh parsley leaves.

It’s a super quick and easy recipe, and so tasty and filling!
