Do you ever have those days where all you can think about eating is a certain kind of soup? I don’t, but John certainly does. A menacing craving for potato & leek soup suddenly took hold of him yesterday, but as we ate breakfast late (almost lunchtime) and had to go to my sisters house for dinner just a few hours after that, we didn’t have time – or the stomach capacity – to make it. However, we bought the ingredients ready to make today, to satisfy his soup craving and shut him up.

(I know John reads this so HI, I’m totally kidding & I love you almost as much as you love this soup!)


This potato & leek soup isΒ deliciously creamy, and so perfect to serve with thick slabs of vienna bread – and it makes so much! The serving shown in the pics was enough to fill me up, and we haveΒ so much leftover. Hello weekday lunches.

A delicious, creamy blend of potato & leeks, perfect for any occasion - as a side dish, or a full meal served with thick slices of bread!

Instructions
  1. Using a large stock pot, melt butter over medium heat.
  2. Turn heat down to medium-low and add leeks and onions. Stir well to ensure vegetables are coated in butter, and allow them to soften slowly without browning. This process takes approximately 12 minutes.
  3. Add potatoes, and fry for another 3 minutes.
  4. Add chicken stock, cover stock pot and let simmer until the potatoes are totally soft.
  5. Remove from heat, and blend until smooth with no chunks. As I don't have a stick blender, I used a regular blender and did this in two batches.
  6. Return to medium-low heat, add cream and stir. Once combined, add salt and pepper to taste, and heat through without boiling.
  7. Serve with thick slabs of your bread of choice (I recommend vienna or sourdough!)
Recipe Notes

As leeks often come with dirt in between the layers, a good way to properly wash them is to cut a vertical line right down the vegetable, and run under water whilst opening each layer.

I will admit this soup takes a little bit of time to prepare & cook, but as soon as you smell the leeks frying with the butter, you know it’s gonna be soΒ worth it! I actually don’t have enough recipes with leeks in them (in fact, this may be the first, even though it’s a real winner) so I think I’m going to have to make that one of my cooking priorities! …After Blogmas, of course.
