Cream Cheese and Berries Breakfast Puffs

I only really eat breakfast on the weekends, because I refuse to wake up any earlier for work than I absolutely have to, so today I decided to try something new instead of my usual toast. So I’m here to bring you… Cream Cheese & Berries Breakfast Puffs.

I haven’t actually worked with puff pastry a lot, so this was pretty fun for me. As you can see, they got a little messy, but I kind of like how they came out anyway. It adds character… or something.

You could also try this with other fruits – I opted for berries because I looove blackberries, but thought it would be nicer to try a few different varieties. If you try any others, let me know!

Instructions
  1. Preheat your oven to 180 degrees celsius, and line two trays with baking paper.
  2. In a mixing bowl, combine your cream cheese, sugar, imitation vanilla, lemon juice, and lemon zest using a large spoon. Stir the ingredients until fluffy.
  3. Place your 2 puff pastry sheets on a lightly floured surface. Use a cookie cutter or a glass (I used a glass) to cut out six circles from each sheet of your puff pastry. *Note – depending on the size of your puff pastry and/or your cookie cutter, you may get slightly less/more than I did – feel free to adjust any of the ingredients to make an amount better suited to your needs.
  4. Use a knife to lightly score a circular border approximately 1 centimetre from the edges. Then use a fork to prick the centre of each pastry circle. Place each pastry onto your trays (lined with baking paper), half on each.
  5. Scoop a small spoonful of your cream cheese mixture onto the centre of each pastry. Use the back of your spoon to flatten and spread the mixture more evenly. Then add your fruit onto the cream cheese.
  6. Using a small bowl, add the egg and 1 tablespoon of water and whisk them together. Once mixed, brush the edge of each pastry with it.
  7. Bake the pastries for 15 minutes, or until golden and puffy.
  8. Once cooked, take the pastries out of the oven and allow them to cool for 5 minutes before serving.

      I started baking at a fairly young age, but only a few certain things that I would make over and over. Cooking came later! I started with different pastas when I was 16 and just started experimenting from there :) I always loved it, though – when I was a kid my mum would sometimes let me play “fake cooking” where I would just throw a bunch of ingredients together for fun and pretend I was a chef, hahaha.
