Cheesy Bacon Jalapeño Bread

Hi!

I got to leave work a little early today, so I decided to go grocery shopping and get some ingredients for new recipes to show you guys. I’ve been a little slack with it, and definitely want to start posting more as I’ve mentioned, so what time better than the present?

I love bread. If I could only have one type of food to live on for the rest of my life, I think it would be various types of bread. (But don’t quote me on that – I need a little more time to think about it before I’m ready to commit.)

I also love bacon (you might remember that from my Bacon-Ado Breakfast Toasted Sandwich recipe.)

I’m not overly enthusiastic about jalapeños. I’ve had some bad moments with them. (Eg: my boyfriend told me it was a pickle slice, which I love, and gave it to me, and watched in glee while my eyes watered and mouth burned… which I will admit was hilarious, but I’m still yet to forgive him.) However, as John (the aforementioned evil jalapeño giver) likes them, I wanted to start incorporating more into my cooking. Besides, this will prepare me for any more pickle-peño situations.

Don’t be alarmed if you don’t like jalapeños or hot things – you can take them out and this recipe will still taste great – the combination of the bacon and cheese is the main taste, the jalapeños just give it a little extra kick.

I hate using this word, but check out how moist that bread is in the centre. Delicious.

Instructions
  1. Preheat your oven to 180 degrees celsius.
  2. Add your bacon, jalapeños, cheese and cream cheese to a large bowl and combine well.
  3. Using another bowl, combine your flour, baking powder, salt and white sugar. Use a fork to blend these together.
  4. Add the bacon/jalapeños/cheese/cream cheese mixture, the olive oil, and the buttermilk to the second bowl (step 3), and combine. I used a tablespoon until most of the ingredients were blended, and then my hands to get all the flour mixed in well.
  5. Spread your mixture evenly into a loaf pan.
  6. Bake for 45 minutes, let cool on a wire rack for 5 minutes, and enjoy!

How simple is that?! Before I started baking bread I thought it sounded much more difficult than it actually is.

Please let me know if you try this recipe, I’d love to hear your thoughts on it.
