This isn’t really as a recipe as much as it is a couple ingredients thrown between two slices of bread, but as it’s one of my favourite things to make for breakfast I thought I’d give you the ridiculously quick recipe regardless. Keep in mind that any one of these ingredients can be swapped out for something else you’d prefer or just not used altogether, this is just the combination that I like! You can’t go wrong with bacon and avocado (hence the bacon-ado title).
Bacon-ado Breakfast Toasted Sandwich
BACON. AVOCADO. What more can I say?
Pour a little bit of oil into a small frying pan or skillet. Wait for oil to get hot, then add your 2 pieces of bacon.
Put your bread in the toaster and let cook while you do the next step.
Cut your avocado in half, and scoop out the insides into a bowl. Using a fork, mash the avocado into a thick, yet even consistency. Add sea salt and cracked pepper. I use a few turns of my grinders, but the amount you use depends on your preferred taste. Mix the avocado around to spread the salt & pepper throughout it. Add teaspoon of wholegrain mustard, and combine again.
Retrieve your toast from the toaster, and spread the mashed avocado & mustard onto the two pieces. Add your sun-dried tomatoes on one half, and the light tasty cheese on the other. Drip your teaspoon of mayonnaise over the sun-dried tomatoes (I only use a teaspoon because I don’t want it to be overpowering, but if you’d like to use more than go ahead.)
When your bacon is cooked (mine was by this point), place the two pieces over the cheese, so the heat from the bacon melts it slightly.
Put the two halves together, and enjoy!
How incredibly simple is that? Since you can do the other steps while your toast & bacon is cooking, it virtually takes no time at all, and it’s so tasty!
