PROSCIUTTO WRAPPED HALLOUMI
THE HALLOUMI TREND
You know how every now and then, a random food will become super trendy and the “in” thing to eat? We’ve seen it happen with avocado, turmeric lattes, smoothie bowls, etc. Generally, when these videos pop up, I get to be that annoying person and be all “oh, I’ve been eating that for months/years etc.” Don’t worry – I don’t actually say it, but I could. However, one trendy food I’ve actually never tried before is halloumi! It sounds crazy, seeing as how big it’s gotten. I’ve seen an endless amount of videos pop up on my facebook feed about halloumi this, halloumi that, halloumi fries, etc. I’ve always wanted to try it as it looked delicious, but just never did.
Well, I decided to change that this month. I was creating a couple of different Christmas appetisers, and thought that it would be the perfect opportunity to try halloumi. I kept the recipe super simple, as I wasn’t sure how it would work out… It turns out combining halloumi and prosciutto was a genius move; it was the definite hit of the party. I can now say with confidence that I am a fan of halloumi, and can’t wait to start experimenting and creating more recipes using it!
- 180g halloumi cheese
- 6 slices prosciutto
- 1 tbsp lemon juice
- 1 tsp minced garlic (or 1 clove, minced)
- fresh thyme for garnish
- Cut halloumi into 12 slices. Cut each slice of prosciutto in half widthwise, and wrap around halloumi.
- Cook halloumi on heated grill pan for approx. 2-3 minutes each side, or until prosciutto starts to crisp.
- Once cooked, combine lemon juice & minced garlic, and drizzle over halloumi. Add thyme for garnish. Serve immediately.
