MOJITO WATERMELON SLICES
THE MINT TO MY MOJITO
Watermelon is the perfect treat for those warm, sunny days. It’s tasty, refreshing, and just screams summer. Even though it’s amazing the way it is, today I decided to kick it up just a knotch by adding a couple of ingredients to create mojito watermelon slices.
It’s crazy how just a few simple ingredients can make such a huge change. These mojito watermelon slices are zesty and addictive. It’s exactly like a mojito in fruit form, but without the alcohol… and, between you and I, I think a boozed up version is definitely on the agenda.
I used half a watermelon when I made this, which was plenty. If you decide to use a whole watermelon, make sure you double the other ingredients – or reduce them if you decide to use a smaller portion.
SO, YOU’LL NEED
- 1/2 watermelon
- 2 tbsp olive oil
- zest of 1 lime
- 2 tbsp lime juice
- 1 tsp sugar
- sea salt
- ground black pepper
- a few mint leaves, torn into small pieces
- flaky sea salt
- In a small bowl, whisk together olive oil, lime juice, lime zest, and sugar to make the dressing. Add a pinch of sea salt & black pepper.
- Cut watermelon into desired shapes & sizes. I left the rind on, though you can discard if preferred. Pour dressing over watermelon slices, and add torn mint leaves and flaky sea salt.
